Craving pizza, but don’t have the dough or the time to make it? An idea is the piadipizza, the flatbread that transforms into a pizza. Discovered for the first time in a pub, and I find it excellent!!! Pizza is unmatched, but this alternative is really not bad at all, and if you make the flatbread at home, it’s even better. Ideal as a savory snack for an afternoon or quick bite, or for an aperitif. Plus, you can fill it however you like.

Ingredients
- 1 flatbread
- 3/8 cup tomato sauce
- 2 oz mozzarella for pizza
- 1 tablespoon extra virgin olive oil
- A few leaves basil
- to taste dried oregano
- to taste fine salt

Preparation
To prepare the piadipizza…
First, cut the mozzarella for pizza, also known as loaf cheese, into slices or cubes, which stays drier compared to regular mozzarella.
Then take the ready-made flatbread, top it with tomato sauce, extra virgin olive oil, mozzarella, a sprinkle of salt, and oregano.
Preheat the pan, place the flatbread, and cook on low heat for about 5 minutes. Make sure it doesn’t become too dry and the base doesn’t burn.
Then turn off the heat, cover with a lid until the mozzarella has melted.
Serve it piping hot, adding some fresh basil leaves.
