Peel the potatoes, wash them, cut them into pieces, and immerse them in a pot with cold water. Bring to a boil and cook for about 20 minutes, checking the cooking by piercing them with a fork.
While the potatoes are cooking, peel and slice the onion. Then take the champignon mushrooms, remove the end of the stems, clean them with a damp tea towel to remove any soil residues, and finally slice them.
In a pan, pour the extra virgin olive oil, brown the onion, then add the mushrooms and cook them for 10 minutes, covering with a lid until they are cooked. Uncover the pan to let the water evaporate that formed during the cooking of the mushrooms.
When the potatoes are cooked, drain them and mash them inside a bowl using a potato masher.
Add the freshly cooked onion with mushrooms, the Emmental cheese and bacon cut into cubes, the egg, the chopped chives, salt, and pepper to the potatoes. Mix everything well.
Grease the bottom of a baking dish or pie dish, sprinkle a bit of breadcrumbs, and pour the mixture, leveling it with a spoon or spatula. Sprinkle a bit more breadcrumbs on the surface.
Finally, bake the potato pie in a preheated oven at 356 degrees Fahrenheit and cook it for 30 minutes in fan mode. Serve it hot.
