The pumpkin, kale, and bean soup is a delicious dish to savor on cold autumn and winter days. A real comfort food like all soups, creams, and broths that, with just a few simple ingredients like vegetables and legumes, sometimes adding pasta, rice, grains, or bread, make for a healthy and complete meal. For the recipe, I used the vegetables I had on hand, so pumpkin and kale, then added some cannellini beans and homemade croutons to make the dish even richer.

- 7 oz delica pumpkin
- 3.5 oz canned cannellini beans
- 1.75 oz kale
- 1 oz white onion
- 1 tbsp tomato paste

Steps
To prepare the pumpkin, kale, and bean soup…
Take the pumpkin, cut it into four parts, remove the skin with the knife and use the carving tool to remove the strings and seeds. Then cut it into not-too-small cubes, about 0.75 inches.
Then clean the kale, discarding the damaged and yellowed leaves. Score each leaf with the knife blade to remove the central, thicker, and harder vein. Cut the leaves into smaller pieces and wash them under cold running water.
Finally, peel and chop the white onion, add it to the pot, add the extra virgin olive oil and sauté it over medium heat, stirring with a wooden spoon.
When it is golden, add the cubed pumpkin, kale leaves, and water or vegetable broth. Cook the soup for 20 minutes over medium heat, stirring occasionally.
Halfway through cooking, add the well-rinsed cannellini beans from their preservation liquid, the tomato paste, and season with nutmeg, salt, and pepper.
The soup will be slightly thick, and when the pumpkin is soft and a little mushy, the soup is ready to enjoy.
You can add more water if you prefer it more liquid, or cook it a little longer to make it drier according to your taste. Serve it very hot.
