Ricotta and Coconut Balls are delicious and easy-to-make treats perfect for summer, but not only. They are prepared in minutes, with few ingredients and are no-bake. Soft balls made with ricotta, grated coconut, sugar, and you can also add cocoa powder if you like. Ideal to serve at snack time, as a dessert after meals or to accompany coffee.

- 8.5 oz cow's milk ricotta
- 2/3 cup granulated sugar
- 1 1/3 cup grated coconut
- 2 tbsp unsweetened cocoa powder (optional)

To prepare the ricotta and coconut balls…
In a bowl, pour the ricotta, grated coconut, granulated sugar, and unsweetened cocoa powder (optional).
Mix everything with a spoon and place the bowl in the refrigerator for 10 minutes. If the mixture is too dry, add a little milk.
After the rest time in the refrigerator, take a little at a time and with moistened hands, form balls about the size of a walnut (I made them 25g each, but you can make them smaller).
As you form the ricotta and coconut balls, place them on a flat plate until the mixture is finished.
Finally, place the balls in the refrigerator for about an hour before enjoying them.
