- 1 clove garlic
- 1 tbsp extra virgin olive oil

To prepare sautéed zucchini…
Take the zucchini, wash them, remove the ends and cut them into rounds, sticks, or cubes not too small.
In a pan, pour the extra virgin olive oil and sauté a peeled garlic clove cut in half, being careful not to burn it.
When the garlic is golden, remove it, set it aside, and add the cut zucchini to the pan. Cook them over medium heat for 15 minutes, covering with the lid and stirring occasionally with a wooden spoon. If necessary, add a scant tablespoon of water to soften them during cooking.
Towards the end of cooking, remove the lid and finish cooking the zucchini. They should be crispy, tender, and golden. Sauté them in the pan for a few more minutes with the garlic, salt, and pepper. Serve them hot, adding fresh chopped parsley on top.
