The savory pie with ricotta, pesto and green beans is ideal to serve both as an appetizer and as a starter. A delicious puff pastry, in this case I used the ready-made one to speed up the recipe, filled with fresh ricotta (cow, goat, sheep or mixed), green beans, either frozen or fresh, both are fine, and the fragrant and tasty pesto, either good quality store-bought or homemade. For a richer recipe, you can also add boiled potatoes cut into cubes to add to the filling.

- 1 roll puff pastry (round)
- 250 g ricotta
- 200 g green beans (frozen or fresh)
- 160 g Genovese pesto
- 2 tbsp extra virgin olive oil
- 1 tbsp Grana Padano cheese, grated

Preparation
To prepare the savory pie with ricotta, pesto, and green beans…
First, fill a pot with water and bring it to a boil. Once boiling, add the frozen green beans and cook them for 10 minutes after it starts boiling again. Meanwhile, prepare the pie filling.
In a bowl, place the ricotta, pesto, and grated Grana Padano cheese.
Once the green beans are cooked, drain them well, cut them into pieces about 3/4 inch, and sauté in a pan with the extra virgin olive oil for a few minutes to make them drier.
Then add them to the bowl with the ricotta and pesto, and mix well to combine all the ingredients.
Now unroll the puff pastry with its parchment paper into a pie pan (10 inches in diameter), prick the bottom with a fork and fill the pie with the prepared mixture, leveling it well with a spatula or spoon.
Garnish the top of the pie with some pine nuts if desired, and bake the pie in a preheated oven at 356°F and cook for 30 minutes in static mode.
Once the pie is done, remove it from the oven and enjoy it hot straight from the oven or at room temperature.
