Take the onion, peel it, and slice it thinly, then place it in a pan with the extra-virgin olive oil and let it sauté.
While the onion is cooking, wash and halve the cherry tomatoes, then add them to the pan with the onion, add a little water, and cover with the lid. Cook them until they become soft; it doesn’t matter if they break apart.
After that, cut the seitan into cubes, add it to the cherry tomatoes, and cook it, letting the water formed during cooking evaporate and removing the lid.
