Steps
To prepare the squid rings with potatoes and cherry tomatoes…
First, take the potatoes, peel them, cut them into pieces (about 3/4 inch in size) and wash them.
In a pot, pour cold water, immerse the cut potatoes and bring to a boil. Cook them for 10–15 minutes over high heat. Check doneness by piercing them with the tines of a fork; they should not fall apart.
While the potatoes cook, wash and cut the cherry tomatoes in half or quarters, then put them in a bowl.
Pat the squid rings dry with paper towels and add them to the bowl with the tomatoes.
When the potatoes are cooked, drain them and add them to the bowl with the other ingredients. Add the extra virgin olive oil, breadcrumbs, salt, pepper, chopped fresh parsley and gently mix with a spoon.
Place the air fryer parchment paper in the basket, pour in the squid rings with the potatoes and cherry tomatoes. Cook them at 356°F for 20 minutes. Serve hot.
