Air Fryer Eggplant Cutlets

Air fryer eggplant cutlets, a vegetarian main course or a delicious appetizer? I think they work well both ways!

Ingredients

  • 1 eggplant (purple)
  • 1 egg
  • breadcrumbs
  • 1 spray olive oil
  • salt

How to prepare Air Fryer Eggplant Cutlets

  • Wash the eggplant, dry it and cut it into slices not too thin.

    Prepare a plate with breadcrumbs and in another plate beat an egg. Coat the slices on both sides first in the egg and then in the breadcrumbs.

    Spray with oil and cook in air fryer at 320°F for 20 minutes. Salt the eggplant cutlets and serve immediately.

Cooking times may slightly vary depending on the model of air fryer you own, always check the cooking.
