Air Fryer Grilled Eggplants are a great summer side dish to serve cold, simply seasoned with oil, salt, and parsley. You can also use them as a base to prepare other dishes, such as the light Eggplant Parmesan.
An easy and very versatile dish, you can pair it with meat, fish, and cheese. I even cut them into pieces and add them to pasta or couscous salads.
If you prefer, you can season them with mint, thyme, oregano, or other herbs to add an extra touch to this dish. You can also add chili pepper if you like.

How to Prepare Air Fryer Grilled Eggplants
Cut the eggplants into slices not too thin, I made them about 1/4 inch thick, and place them on the air fryer grill without overlapping them. If necessary, do multiple batches. Spray with some oil and cook at 356°F for 10 minutes. Flip them over, spray with a bit more oil, and cook for another 5 minutes.
Let the eggplants cool and season them with garlic, chopped parsley, and a drizzle of extra virgin olive oil. Mix well and let them rest in the refrigerator for at least 15 minutes before serving.
Cooking times may vary slightly depending on the air fryer model you own, always check the cooking.
Storage
You can store the seasoned eggplants in the refrigerator, sealed in an airtight container, for up to three days.
