Butter cookies in the air fryer, perfect for after-dinner or to serve with tea. These cookies are easy to make and always disappear fast. I often use the air fryer to bake desserts, for example the Nutellotti – Nutella cookies which are delicious – and the soft apple cookies, which are simple to make.
In this case you can prepare the shortcrust pastry in advance and keep it in the fridge for a few days, which speeds up the work. I made them heart-shaped, but you can use any cookie cutter for any occasion. Changing the shape, you can adapt them for Easter with bells or bunnies, or for Christmas with stars and trees.

- 3 1/8 cups 00 flour (all-purpose flour)
- 1 egg
- 1/2 cup sugar
- 14 tbsp butter
- lemon zest
- 1/2 teaspoon baking powder
- 1 pinch salt

Steps: Butter Cookies in the Air Fryer
Put the butter cut into small pieces, the sugar and the grated lemon zest in a bowl. Start working the mixture by pinching the pieces of butter and sugar between your fingertips. Add the egg and continue pressing with the tips of your fingers.
Add the flour, the baking powder and the salt, working as little as possible with your fingers to form a ball.
Wrap the shortcrust pastry in plastic wrap, press it slightly (this makes it easier to roll out) and refrigerate it for at least 30 minutes.
Now roll out the pastry with a rolling pin, using a little flour, to a thickness of about 1/8–5/32 inch (3–4 mm), and cut out the cookies using the cookie cutters.
Lightly flour the work surface so the dough won’t stick. Use a cutter to cut the cookies and rework the scraps to get more cookies until the dough is finished.
Bake them in the air fryer on a sheet of parchment paper at 320°F for 8–9 minutes. Then check them and, if necessary, add another minute. I recommend checking them halfway through to ensure they bake evenly.
At this point the cookies are ready: remove them from the air fryer and let them cool completely before serving.

Can I bake them in the oven?
Of course: place them on a baking sheet lined with parchment paper and bake in a preheated oven for about 12 minutes at 356°F.
