Caprese Pasta Salad

Caprese Pasta Salad is a simple, colorful, and irresistible first course, perfect for those who love Mediterranean cuisine. Inspired by the classic caprese salad, this recipe is a cold pasta dish with cherry tomatoes, buffalo mozzarella, and fresh basil, all seasoned with a drizzle of extra virgin olive oil.

It is a light, colorful, and very tasty dish, ideal for a summer lunch, to take to work or the beach. You can prepare it in advance and store it in the refrigerator for a day.

The heat continues, and we often have salads and cold dishes on our table, but I think cooking has never felt so burdensome as it has this past month… Maybe it’s because I’m not organizing my weekly menus as I used to, or because the muggy weather makes me lose the desire to cook, but I need to get back on track.

Ingredients

  • 10.5 oz pasta
  • 8.8 oz cherry tomatoes
  • 10.5 oz buffalo mozzarella DOP
  • 8 leaves basil
  • extra virgin olive oil
  • salt

Steps for Caprese Pasta Salad

  • Place a large pot of salted water on the stove and bring to a boil. For this recipe, I used mafaldine, but you can choose any short pasta shape you prefer.

    When the water boils, add the pasta to the pot and cook for the minutes indicated on the package, then drain it and toss with a bit of oil to prevent sticking.

    In the meantime, prepare the dressing: quarter the cherry tomatoes and dice the mozzarella. When the pasta is cold, combine the cherry tomatoes, mozzarella, basil, adjust the salt, and mix everything.

    Place the Caprese Pasta Salad in the fridge for at least 30 minutes before serving.
