Carnival Chatters

Carnival Chatters, crispy, puffy, and with lots of bubbles, are a typical sweet of this time of year. They are called by different names depending on the region: chatters, lies, rags, crusts… They are thin sheets of dough fried in plenty of oil and sprinkled with powdered or granulated sugar, a delight!

The recipe is simple, you can prepare it by hand as I did and roll out the dough with a pasta rolling machine or a rolling pin. Just fry them and drain them well on absorbent paper to get an excellent product, of quality and delicious like the chatters you buy at the pastry shop.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 3 tbsp sugar
  • 1/4 cup milk
  • 2 eggs
  • 2 tbsp butter (melted)
  • 2 tbsp vanilla extract (or Rum)
  • 1 pinch salt
  • peanut oil (for frying)
  • powdered sugar (for garnish)

Preparation of Carnival Chatters

  • First, put the flour, sugar, and salt in a bowl, then create a hole in the center and add 2 eggs, milk, vanilla extract, and melted butter. Mix with a spoon bringing the flour to the center and help yourself with your hands to form a ball.

    At this point, let the dough rest covered for 15 minutes.

  • Roll out the dough with the pasta rolling machine until you get a thin sheet, I reached number 4.

    Cut rectangles with a fluted wheel and make two cuts in the center of each chatter. Fry them in hot oil turning them often and then drain them well on absorbent paper.

  • Place the chatters on a serving dish and finally sprinkle with powdered sugar.
