Carnival doughnuts filled with Nutella are typical Lombardy sweets that must not be missing from our tables during this festive period. They are very delicious because they remain empty inside and can be filled with various types of creams.

At carnival, we fry, and although I don’t love doing it, sometimes I do it too. I chose to fill these doughnuts with hazelnut cream, but they are also excellent with the classic custard, zabaglione, or just empty, simply sprinkled with powdered sugar.

Ingredients
- 1.6 cups all-purpose flour
- 1.1 cups water
- 5 eggs (medium)
- 3.5 tbsps butter
- 1/4 cup sugar
- 1 lemon zest (grated)
- 1 pinch salt
- 1 tbsp vanilla extract (or vanilla sugar)
- as needed Nutella®
- seed oil

Steps: Carnival Doughnuts Filled with Nutella
In a pot, bring the water, salt, and butter to a boil. Once boiling, remove the pot from the heat and add all the flour at once. Stir and return the pot to low heat, stirring with a spoon until the mixture detaches from the sides.
At this point, transfer the dough to the mixer bowl and add the grated lemon zest, vanilla extract (or vanilla sugar), and sugar.
Mix well and add one egg at a time, adding the next only when the previous one is incorporated. You should obtain a thick and homogeneous dough.
Now take a high-edged pan and heat plenty of seed oil. When hot, fry the dough, letting it drop gently into the oil by spoonfuls.
Turn the doughnuts halfway through cooking to ensure even browning, and let them drain on absorbent paper.
Put the Nutella in a bowl and slightly warm it in the microwave to make it more liquid. Insert it into a pastry bag with the nozzle and fill all the doughnuts.
Storage
The doughnuts can be stored for 3 days in an airtight container or on a plate covered with plastic wrap.
