The Cauliflower Patties Stuffed with Scamorza are a very tasty vegetarian main dish, hiding a surprise inside: a cheesy heart that will win everyone over.
Baking makes this dish healthier and lighter.
In this recipe, I steamed the vegetables in the microwave, but if you prefer, you can also boil them and let them drain well before using.

Ingredients
- 1.1 lbs cauliflower
- 10.6 oz potatoes
- 1 egg
- 1.4 oz scamorza
- 2 tbsps Grana Padano cheese, grated
- to taste breadcrumbs
- salt
- pepper
- 1 drizzle extra virgin olive oil
How to Prepare Cauliflower Patties Stuffed with Scamorza
Peel the potatoes, cut them into cubes and separate the cauliflower into florets. Steam them for 15 minutes, I used the microwave and a suitable container.
Mash the vegetables with a fork or potato masher and add salt, pepper, the egg, grated cheese, and enough breadcrumbs to get a workable mixture that doesn’t stick too much to your hands.
Divide the mixture into mounds of your preferred size, I made them quite large.Cut the scamorza into as many pieces as patties you want to make. Put a piece of cheese in each patty and shape them round with your hands, flattening them slightly. Place them on a baking sheet lined with parchment paper, add a drizzle of oil and bake the patties in a preheated static oven at 375°F for 15 – 20 minutes.
Remove the Cauliflower Patties Stuffed with Scamorza from the oven and serve them hot to enjoy the melted cheese.
