  • 14 oz cod fillets
  • 1.4 oz stale bread
  • 2.7 tbsp milk
  • chopped parsley
  • 1 egg
  • 1 pinch salt

  • 2 tbsp extra virgin olive oil
  • 1 pinch salt

Steps: Cod Meatballs in Tomato Sauce

  • First, prepare the sauce: chop the onion and let it sauté over low heat in a pan with the oil. After a couple of minutes, add the tomato puree and cover with the lid.

    While the sauce is cooking, make the meatball mixture by cutting the stale bread into pieces. Place it in a bowl with the milk and let it soften for a few minutes.

    Meanwhile, check that the cod fillet has no bones and, if present, also remove the skin. Place it in a blender or food processor along with the egg, squeezed bread, parsley, and season with salt.

    Blend until you get a homogeneous mixture, then form the meatballs.

    Drop the cod meatballs into the hot sauce and cook them for 15 minutes. Check the cooking and adjust the salt, then place them on the serving dish and serve.
