The peculiarity of this recipe is that it is without eggs and butter, present in the classic crumble dough.
Crunchy on the outside and creamy inside, the crumble is a very easy cake to prepare because the shortcrust pastry does not need to rest in the fridge and does not need to be rolled out!
You just need to make a crumbled dough, put it in the pan, fill it, and cover it with more crumbles. You can fill it as you like: ricotta and Nutella, jam, preserves and apples, or, as in this case, with ricotta and chocolate chips.

Ingredients for a 9-inch pan
- 3 1/4 cups flour
- 1/2 cup sugar

How to Prepare Crumble Cake with Ricotta and Chocolate Chips without Eggs
Put ricotta, sugar, and chocolate chips in a bowl, mix them together and you will have the cream to use as filling.
Prepare the shortcrust pastry by putting all the ingredients in a bowl and work them until you get a crumbled dough.
Put half of the crumbles in a cake pan, cover with the ricotta cream, and finish with the remaining crumbles.
Cook in the air fryer at 311°F for 25 minutes, then turn it and continue for another 15 minutes. If you like, sprinkle with powdered sugar.
Notes
Cooking times may vary slightly depending on the model of air fryer you have; always check the cooking.
If you prefer to bake the cake in the oven, you can do so at 338°F for 35-40 minutes.
