The Curry Gratin Zucchini are a spicy and flavorful side dish, with a scent reminiscent of the Middle East, cooked in an air fryer. Ready in no time and made with very few ingredients, these zucchini will surprise you.
I had these zucchini for the first time this summer, at the hotel buffet where we stayed. I really love vegetables, and every day there was an overwhelming amount, always cooked in a different way. Simple things, but with the addition of spices or aromatic herbs, they completely change flavor and it feels like you’re eating something extraordinary, but in this case, they’re just simple zucchini.

To prepare this dish, I used this drawer air fryer with a 5.5-liter capacity.

- 1 zucchini
- 1 tablespoon grated Grana Padano
- to taste curry

How to Prepare Curry Gratin Zucchini in Air Fryer
First, wash the zucchini and dry it, then cut it into slices about 1/4 inch thick, I used the mandolin.
With a knife, make cuts in the slices as seen in the photo, this way the cooking will be facilitated.
Season the zucchini with salt and place them directly in the air fryer basket, without parchment paper.
Cook the zucchini at 375°F for 5 minutes, flip them over and add the grated cheese and a pinch of curry powder. Continue cooking for another 5 minutes until gratin.
Cooking times may vary depending on the model of the air fryer, always check the cooking.

Can I cook the curry gratin zucchini in the oven too?
Yes, absolutely! Cook the zucchini slices for 12 minutes at 375°F, flip them and add the cheese and curry. Continue cooking for another 8 minutes at 400°F until gratin.
