Eggless Apple Cake – Vegan Recipe

Eggless apple cake, the vegan recipe for a soft, fragrant, and light dessert, ideal for those who want to prepare a wholesome snack with few ingredients. It is a homemade, simple recipe suitable for the whole family: for those intolerant to eggs, for children, and for anyone who wants a light dessert.

Even though it’s without eggs and milk, the cake remains soft because the apples keep the batter moist. I used oat milk, but you can use any plant-based milk you like, and if you don’t want to make it vegan, you can use cow’s milk.

This cake is quick to prepare, without complicated techniques, and is perfect for breakfast or an afternoon break accompanied by tea or coffee.

The quantities are for a 9-inch pan, but if you prefer it thin like mine, use a larger one as I did.

Ingredients

  • 2 apples
  • 1 3/5 cups all-purpose flour
  • 1 cup plant-based milk (or cow's milk)
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup corn oil
  • 2 teaspoons baking powder
  • 1 pinch salt

Steps

  • First, peel 1 apple, cut it into pieces, sprinkle it with cinnamon, and set aside.

    In a bowl, mix the sugar, oil, oat milk, and blend with a whisk. Add the flour, baking powder, cinnamon, a pinch of salt, and mix until smooth and lump-free.

    At this point, add the previously cut apples and mix with a spatula, then transfer the mixture to the pan lined with parchment paper.

    Peel the remaining apple, slice it, and place the slices on top of the cake batter.

    Bake in a preheated oven for 45-50 minutes at 356 °F and let it cool completely before removing it from the mold.
