Eggplant Meatballs are a light and tasty main course that requires only a spray of oil because it’s cooked in an air fryer. I often prepare this dish because it’s very quick, and I usually cook the eggplants in the morning or the day before, so in the evening, I just need to shape the meatballs and dinner is ready in a flash.
Since I got an air fryer, I often cook eggplants and peppers because they are vegetables I really like, but before, to avoid turning on the oven and consuming too much electricity, I didn’t prepare them.
Just to heat the oven takes fifteen minutes, but with the air fryer, I do it much faster: it doesn’t even need preheating, so I save time and cook whatever I want!

Ingredients
- 2 eggplants
- 1 shallot
- 2 tablespoons Grana Padano cheese, grated
- 1 egg
- 1 tablespoon chopped parsley
- as needed breadcrumbs
- 1 spray extra virgin olive oil
- 1 pinch salt

How to Prepare Eggplant Meatballs in Air Fryer
Wash the 2 eggplants, pierce them with the tip of a fork, and then cook them in an air fryer for 25 minutes at 374°F. (In this photo I cooked an extra one to use in another way)
Cut them in half, discard the skin, and chop the pulp into pieces.
Chop the shallot, put it in a bowl, and add the eggplants, the egg, parsley, a pinch of salt, and the grated cheese.
Work the mixture with your hands and add breadcrumbs until you reach a workable consistency.
Take some mixture, roll it between your hands, and form the meatballs. Place them in the fryer basket and spray them with oil.
Cook for 20 minutes at 356°F, shaking the basket halfway through to turn them.
