Ingredients for a 20 x 20 cm pan
- 2 eggplants
- 200 g mozzarella for pizza
- 2 tablespoons grated Parmesan cheese
- 600 g tomato puree
- 1 clove garlic

How to prepare Eggplant Parmigiana in the air fryer
Heat a bit of oil in a pot and lightly fry the garlic over low heat, then remove it.
Add the tomato puree and let it cook for about 20 minutes, stirring occasionally, season with salt, add the basil leaves, and turn off the heat.
Cut the eggplants lengthwise with a mandoline. Grill the slices on a hot grill for a minute, then flip them and cook for another minute on the other side, they should have typical black lines.
Put a couple of tablespoons of sauce in the pan and spread it well, make a layer of eggplants without overlapping them and add a pinch of salt.
Cover the eggplants with some sauce, add some pieces of cheese and continue like this until all ingredients are used. On the last layer, add grated Parmesan cheese and bake at 375°F for 13 minutes if you want a nice crust like mine, otherwise lower the temperature to 350°F.
