The preparation is really easy: the zucchini are sliced and grilled until soft, then seasoned with a drizzle of oil, salt, and pepper. To finish, crumbled feta is added, providing a touch of salty and creamy flavor, creating a delightful combination.

Steps for Grilled Zucchini with Feta
First, wash the zucchini, dry them, and remove the ends. Slice them lengthwise, all at the same thickness; I used a mandoline to do this.
Heat a grill on the stove and, when it’s hot, place the zucchini without overlapping them. If you slice them slightly thick like mine, there’s no need to add oil, but if you prefer them very thin, I recommend brushing the grill to prevent them from sticking.
Cook them over medium-low heat, then turn them and continue cooking on the other side. There’s no exact time because it all depends on the thickness of the zucchini: I lift one to check, and when I see the dark lines, I turn them over.
As they are ready, put them on a plate and let them cool.
Season the grilled zucchini with salt and extra virgin olive oil, give them a good mix, and arrange them on the serving plate. Add crumbled feta and a grind of pepper, then place in the fridge for at least 30 minutes.
