Meringue Hearts are an easy and economical treat, perfect for Valentine’s Day or children’s parties. Beautiful to see and easy to make. I had never tried making meringues before because the cooking process always scared me a bit, but making them was easy and fun.
For the meringues, I used a pastry bag with a 0.4-inch star nozzle, and for the colored shading, I used the same technique I use to decorate cupcakes: I made a line of color inside the bag before adding the meringue, a very simple but effective trick!

Ingredients
- 3 oz egg whites (about 2)
- 1 1/4 cups powdered sugar
- 1 pinch salt
- A few drops lemon juice
- 3.5 oz dark chocolate
- red food coloring (in gel)

How to Prepare Meringue Hearts
Place the egg whites in the bowl of a stand mixer with a pinch of salt and start whipping them (you can also use electric beaters).
When they start to thicken, add about half the sugar, a few drops of lemon, and continue whipping. Once combined, add the remaining sugar and keep whipping until they are nice and fluffy.
Now put the nozzle in the pastry bag and make one or two lines inside with the gel food coloring.
Place the meringue in the bag and cut the plastic tip.
On a baking sheet, make 4 dots with the mixture and place the parchment paper on top; this way, the sheet will stick to the baking sheet and stay still. Shape the meringues and bake at 175–210°F in a static oven for about 2 hours. Check the cooking; if they stick to the parchment paper, they are not yet cooked. In this case, extend by 10 minutes.
Once cooled, dip the base in previously melted chocolate and place them back on the parchment paper. When the chocolate sets, they are ready to be eaten.
Notes
Lemon is used to make the meringues shiny and to reduce the egg flavor.
If the meringues are not eaten immediately, they can be stored in a tin box for a few days.
