The Mini Chocolate and Strawberry Cheesecakes are an easy and very delicious spoon dessert. The great thing is that it’s no-bake and prepared in just 5 minutes, and the combination of strawberries and chocolate is a delight for the palate. You can’t go wrong with these single servings, they are truly beautiful to look at, simple, and everyone will love them!
This month in the Club of 27, we replicated recipes from the book No-Bake Dessert (also available in Kindle format), with 103 easy recipes for no-bake desserts. I must say I read many interesting and quick recipes that I’ve noted and will definitely try soon, but for now, I’ve chosen this one. The original recipe called for raspberries, which I replaced with strawberries for personal preference.

Ingredients for 6 cups
- 9 oz strawberries
- 8 oz cream cheese
- 1 cup heavy whipping cream
- 2/3 cup powdered sugar
- 3 tbsp unsweetened cocoa powder
- 8 chocolate cookies (like pan di stelle)
- 1 tsp vanilla extract
- 1/4 tsp instant coffee
- 1 pinch salt

How to prepare Mini Chocolate and Strawberry Cheesecake
Place the cocoa, instant coffee, vanilla extract, sugar, salt, and cream cheese in a bowl. Work with an electric mixer for one or two minutes, until you obtain a homogeneous cream.
Add the cream and continue whipping everything. Once you have a nice soft cream, put it in a pastry bag and cut the tip (if you prefer, you can also spoon the cream into the cups).
Crumble the cookies with your fingers and distribute them on the bottom of each cup.
Add the cream and finish with strawberries cut into chunks.
Place the cocoa, instant coffee, vanilla extract, sugar, salt, cream cheese in the bowl. Work with the wire whisk for about 1 minute / speed 3, until you obtain a homogeneous cream.
Add the cream and whip everything at speed 4. Once you have a nice soft cream, put it in a pastry bag and cut the tip (if you prefer, you can also spoon the cream into the cups).
Crumble the cookies with your fingers and distribute them on the bottom of each cup.
Add the cream and finish with strawberries cut into chunks.
