Oven roasted peppers are a tasty yet simple side dish to prepare, season with the herbs you like and enjoy them cold.
Oven-baked peppers are quick to make and can be paired with any meat dish or used to fill a sandwich or wrap. You can also blend them with cheese to make a creamy sauce for pasta, in short, they are a very versatile vegetable.
I also made Air fryer roasted peppers, which cook in just 20 minutes.
These peppers are very quick to prepare because the oven cooking doesn’t need to be constantly monitored, you just need to turn them halfway through and meanwhile, you can do other things. These are the recipes I like the most!
To season them, I used classic parsley and garlic, but you can add any herbs you like such as thyme, marjoram, or chives.

Ingredients
- 4 red bell peppers
- extra virgin olive oil
- salt
- chopped parsley
- garlic
How to prepare Oven Roasted Peppers
Wash the peppers and place them whole on a baking tray lined with parchment paper.
Bake in a preheated oven at 410°F for about 35 minutes, turning them a couple of times. By the end of cooking, the peppers should have some blackened spots.
Remove from the oven, let them rest for 10 minutes, and remove the skin.
Cut the peppers into strips and season them with salt, oil, parsley, and chopped garlic. Place in the fridge for at least half an hour, so when you eat them they’ll be nice and cold.
