Pan-fried leeks with bacon are a rustic, simple, and very tasty side dish, perfect for accompanying meats, eggs, or cheeses, or enjoyed alone with a slice of bread. In my opinion, this vegetable is not highly valued despite being good and easy to cook.
The natural sweetness of leeks combines with the salty and crunchy note of bacon, creating a side dish rich in aroma and flavor.
You can use the cooked leeks this way as a base for an omelet or as a filling for a savory pie, simply by adding a beaten egg and some grated cheese.

Steps: Pan-Fried Leeks with Bacon
First, clean the leeks: remove the outermost part if it’s damaged and wash them under water. Remove the roots and the tougher, greener end, then slice them into about 1/4-inch pieces. Place the slices in a colander and rinse them thoroughly under water, separating them with your hands, so any dirt inside washes away, and let them drain in the colander.
Meanwhile, put the oil in a non-stick pan and brown the bacon for a couple of minutes, then add the leeks.
Let the leeks cook for about 10 minutes, stirring occasionally and adding a bit of water to prevent them from sticking to the pan.
Finally, add a pinch of salt, stir, and serve them hot.
