Pizza with Sausage and Brie: a very tasty recipe yet easy and economical, suitable for the whole family. By now, sheet pizza has become a weekend classic; I almost always prepare it for Saturday or Sunday evening, and this recipe is sure to succeed.
This dough is soft, easy to work with, and rises in about 4 hours, depending on the surrounding temperature.
With these amounts, you will get dough for the oven tray, ideal for 4 people. It’s really easy to prepare with very few ingredients you surely have at home. As for the topping, it’s up to you: I chose brie because my son likes it a lot, but you can replace it with taleggio, gorgonzola, or another cheese you like.
If you don’t have the time or desire to make pizza dough at home, you can buy the ready-made one in the bag at the supermarket. However, I recommend not using the pre-rolled one because it wouldn’t rise well.

Ingredients
- 4 cups all-purpose flour
- 1 1/4 cups water
- 2 tsps fresh yeast (or 1 tsp of dry yeast)
- 2 tsps salt
- 4 tbsps extra virgin olive oil (for greasing the tray)
- 1 1/4 cups tomato sauce
- 7 oz mozzarella for pizza
- 5 oz sausage
- 5 oz brie
- dried oregano
- 1 pinch salt
How to Prepare Pizza with Sausage and Brie
Put the water and the flour in the bowl of the mixer. Start kneading with the hook and add the crumbled fresh yeast.
After 2-3 minutes, add the salt and continue to knead until a smooth dough is obtained (it will take at least 5 minutes). Form a ball with your hands and let it rest in an oiled bowl.
Cover the dough with a clean tea towel and let it rise in a warm place, away from drafts. It should rise for about 4 hours, depending on the room temperature; anyway, wait until the dough’s volume has doubled. Ideally, place it in the turned-off oven but with the light on.
At the end of the rising, grease a tray with extra virgin olive oil and gently turn the bowl upside down over it, letting the dough fall down, separating it with your fingers. Let it rest for at least 10 minutes, then spread it by pressing it toward the edges with your fingertips. Let it rest another 30 minutes and then add the topping.
Top the pizza with tomato sauce, spread it well with the back of a spoon leaving a small free edge, and sprinkle a pinch of salt. Add the sausage pieces and a generous pinch of dried oregano and bake for 18 minutes at 392°F.
Meanwhile, cut the mozzarella and brie into slices.
After the time has passed, top with cheeses and bake for 6 minutes, until they have melted.Now remove the pizza from the oven, cut it into pieces, and serve.
