Pizzaiola potatoes in a pan, an economical main dish, very tasty and quick to prepare. Perfect to eat with good rustic bread: in this case, using it to mop up the sauce is a must.
I prepared this dish by boiling the potatoes in slices. Meanwhile, I cooked the tomato and added them to the sauce to flavor them. Finally, I added some Parmesan to enhance the taste and the dish is ready.
You can also choose to serve this dish as a side. In that case, halve the amount of tomato.

Ingredients
- 14 oz potatoes
- 1 cup tomato purée
- 1 clove garlic
- 1 pinch dried oregano
- 1 tbsp grated Parmesan cheese
- extra virgin olive oil
- salt
Steps: Pizzaiola Potatoes in a Pan
First, put a pot with salted water on the stove. Then peel the potatoes and cut them into slices about half an inch thick. When the water boils, cook them for about 8 minutes, and drain gently.
Meanwhile, sauté a clove of garlic in a pan with a drizzle of oil. Add the tomato purée, season with salt and cook the sauce for a few minutes while the potatoes are boiling.
At this point, add the potato slices and cook them in the sauce for 3 minutes. Add some grated cheese, a generous pinch of oregano, and turn off the heat. Let it rest for a few minutes and serve the pizzaiola potatoes with slices of bread.
