Puff Pastries with Zucchini and Pecorino

Puff pastries with zucchini and pecorino, a very tasty and easy appetizer to prepare, with very few ingredients that you can also serve as an appetizer at an evening with friends. They really prepare in a flash. I cooked them in an air fryer, but you can also make them in the oven; the recipe includes both cooking methods.

To make them, you’ll just need a roll of puff pastry, a zucchini, and a piece of pecorino or any flavorful cheese that you might have in the fridge to use up.

If you prefer, you can also try making Puff Pastry at home. It’s a bit of a long process, but it’s worth it because it’s much better than the supermarket version.

Ingredients

  • 1 roll puff pastry (rectangular)
  • 1 zucchini
  • 1.4 oz pecorino
  • salt

How to Prepare Puff Pastries with Zucchini and Pecorino

  • Dice the pecorino and thinly slice the zucchini using a mandoline. Unroll the puff pastry and fold it in half to make it more substantial. Then cut it into four equal parts and, leaving them on parchment paper, place them on the air fryer’s grill.

    Add the zucchini slices, a pinch of salt, and the cheese cubes. Cook in the air fryer for 15 minutes at 170 degrees Celsius (338°F), or in the oven for 20 minutes at 190 degrees Celsius (374°F), until golden brown.

Storage

You can store Puff Pastries with Zucchini and Pecorino in the refrigerator for a couple of days, covered with plastic wrap or in an airtight container.
