You can prepare this dough for milk buns by hand or with a bread machine or mixer; the latter will obviously save you quite a bit of work. If you prefer, you can slightly reduce the amount of yeast and extend the rising times.

Ingredients
- 2 cups all-purpose flour
- 2/3 cup milk
- 2 tbsp butter (at room temperature)
- 0.35 oz fresh yeast
- 2 tbsp sugar
- 1/2 tsp salt
- 1.5 tbsp milk (for brushing)
Steps: Quick Milk Buns
Place the milk, sugar, and yeast in the stand mixer or mix by hand in a bowl, add the flour and salt: knead for 5 minutes, then add the softened butter. Continue kneading until you get a smooth and homogeneous dough, then transfer it to a bowl.
Cover the dough and let it rise for a couple of hours at room temperature until it doubles in size. The required time depends greatly on the temperature.
Now turn the dough onto a lightly floured work surface and divide it into 8 equal pieces. Form balls and place them on a baking sheet lined with parchment paper, then cover them with a cloth and let them rise for another 30 minutes.
Preheat the oven to 390°F (200°C), brush the surface of the buns with a little milk, and bake them for about 15 minutes, until golden. Then remove the buns from the oven and let them cool before filling them as you prefer.
