Quick pancakes are a classic American recipe: delicious, perfect for Sunday breakfast, and ready in no time thanks to the use of a blender or the Thermomix. With this recipe, you’ll have perfect pancakes in minutes: just put all the ingredients in the blender without dirtying anything else. You can top them with jam, fresh fruit, or delicious hazelnut cream, but the classic pairing is with maple syrup.
These pancakes will be the ideal base for a breakfast or snack that’s finger-licking good. You can also prepare the pancakes in advance: just heat them for 10 seconds in the microwave, and they will seem freshly made!

Ingredients for 12 pancakes
- 2 tbsps butter
- 1 1/4 cups milk
- 2 eggs
- 2 tbsps sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder (half a packet)
- 1 pinch salt
- 1 tsp butter (to grease the pan)

Steps: Quick Pancakes
With the blender:
Place the milk, eggs, sugar, flour, baking powder, and salt in the blender. Add the previously melted butter and blend for a few seconds until there are no lumps. The batter is ready.
With the Thermomix:
Put the butter in the bowl and melt it for 2 minutes at 158°F, speed 1.
Add the milk, eggs, sugar, flour, baking powder, and salt, then mix for 10 seconds at speed 5. The batter is ready.Melt half a teaspoon of butter in a non-stick pan and spread it all over, then pour some batter into the pan and cook over medium-low heat.
After 1-2 minutes, you will see bubbles on the surface; at this point, flip the pancake with a spatula and cook it on the other side for about a minute.
Place the pancake on a plate and repeat the process until the batter is finished.
Serve the pancakes with maple syrup, whipped cream, caramel sauce, chocolate, or jam.
