Quick sautéed zucchini is a simple side dish perfect for those who have little time but don’t want to compromise on a healthy and delicious meal. These are just thinly sliced zucchinis sautéed in a pan with oil, garlic, and a pinch of chili pepper for a spicy kick.
This very versatile side dish pairs well with both meat and fish, but it can also be used as a base for a zucchini omelet or a savory pie. I also put it in wraps, along with ham and cheese.
With a few ingredients and in a few minutes, you can bring to the table a colorful and flavorful dish. Whether it’s a quick lunch or a casual dinner, sautéed zucchinis are the ideal choice for a family meal because kids love them too.

- 2 zucchini
- 1 drizzle extra virgin olive oil
- 1 clove garlic
- salt
- pepper

Preparation of Quick Sautéed Zucchini
Slice the zucchinis rather thin: I used the mandolin but you can also do it with a knife.
Put a drizzle of oil in the pan and sauté the garlic clove, then add the zucchinis, a pinch of salt, and let them cook over medium heat with the lid on for a couple of minutes. Add a pinch of pepper and a bit of water if necessary.
Finish cooking for 3 minutes, then remove the garlic clove and turn off the heat. Serve the zucchinis hot.
