Roasted Peppers with Anchovy Sauce

Roasted Peppers with Anchovy Sauce is an excellent side dish that you can serve alongside a meat or fish main course. It’s a very simple yet equally flavorful dish to enjoy all year round, but I recommend preparing it when peppers are in season, from late spring to fall, to get the most from their flavor.

You can roast the peppers either in the oven or in the air fryer, I obviously (to save time and electricity) cooked them in the fryer.

It’s a very easy recipe that in the air fryer prepares much faster than in the oven, no need for preheating!

Ingredients

  • 3 peppers
  • 6 anchovies in oil
  • 1 tablespoon chopped parsley
  • to taste extra virgin olive oil
  • 1 pinch salt

How to Prepare Roasted Peppers with Anchovy Sauce

  • After washing the peppers, place them whole in the air fryer basket and cook for 25 minutes at 374°F, turning them halfway through cooking.

    If you prefer, cook them in a preheated oven for 35-40 minutes at 392°F.

    After the time has passed, take them out and let them cool a bit, then remove the skin, remove the stem, and deseed them.

  • Cut the anchovies into small pieces and place them in a bowl. Add the chopped parsley and olive oil and mix.

    Cut the peppers into strips, season with salt, and add the anchovy sauce, stirring to coat them evenly.

    Let the peppers rest for about an hour before serving.
