The Sandwich Focaccia or poured focaccia in a baking tray is very soft; you can also cook it in an air fryer and, once cool, fill it as you like. It’s perfect for a picnic, a party, or a buffet, and preparing it is very simple: no kneading is required, and you won’t even get your hands dirty because you will achieve a liquid batter that you pour into a baking tray, just like a cake.
You can fill the sandwich focaccia as you like. I used ham, cheese, lettuce, and tomatoes. Other great combinations are tuna, tomato, and mozzarella or speck, cream cheese, and arugula… Filled in any way, it’s delicious, use your imagination!

Ingredients for an 8 x 8 inch baking tray
- 330 g all-purpose flour
- 330 ml milk
- 7 g fresh yeast (or 2.5 g of dry yeast)
- 1 tsp salt (level)
- one third of tsp sugar

Preparation of Sandwich Focaccia in Air Fryer
Take a bowl and dissolve the yeast in the milk. Add sugar, flour, and salt and mix with a whisk. You need to get a batter, as if you were making a cake.
Pour into a 8×8 inch metal tray lined with parchment paper, cover with plastic wrap, and let it rise until doubled.
At this point, add a splash of oil on the surface and a pinch of salt.
Cook in an air fryer at 320°F for 25 minutes or in a preheated oven at 356°F for about 30 minutes. Before taking it out, do the toothpick test to check the center’s doneness and let it cool.
Once cool, cut it in half and fill the base as you like. Cover with the top half, cut it into pieces with a serrated knife, and serve.
Put the sugar, yeast, 100 ml of milk, and heat: 1 min./98.6°F/speed 1.
Add the flour, remaining milk, and salt, knead for 30 sec./speed 5.Pour into a 8×8 inch metal tray lined with parchment paper, cover with plastic wrap, and let it rise until doubled. At this point, add a splash of oil on the surface and a pinch of salt.
