Sliced pumpkin with feta cheese, a quick and tasty side dish that you can pair with any main course. The sweetness of the pumpkin pairs perfectly with this Greek cheese, adding a savory touch to the dish.
Finally, the pumpkin season has arrived! Let’s be clear: I adore it and could eat it almost every day, but my husband and my son Aaron are not crazy about it. For this reason, I cook it as a side dish only for myself. However, in main dishes like risottos, dumplings, or soups, where the taste is less intense, the whole family enjoys it, so I have no problem.
Pumpkin and feta is a well-established combination, and I like them a lot. In fact, I often use them in cooking. The pumpkin with feta and olives in an air fryer is very good, but in the recipe I propose today, the pumpkin is sliced very thinly, and the feta is added at the end of cooking.
The skin of the Delica pumpkin, which is the variety I used, is edible and rich in fiber, beta-carotene, vitamins, and minerals, as well as having antibacterial and antiviral properties. It becomes very tender when cooked, and I left it because I always have difficulty removing it without risking cutting myself.

- 2 oz feta
- 1 spray olive oil

Steps: Sliced Pumpkin with Feta Cheese
First, wash the pumpkin skin, remove the seeds and fibers, and cut it into slices.
They should be thin slices, about 1/16 inch (2 millimeters), because the cooking is very quick: if you slice them thicker, slightly increase the time.
Now place the pumpkin directly on the air fryer’s grill, without trays and without parchment paper.
Season the pumpkin slices with a spray of oil and a pinch of salt, then cook them as I did in the air fryer at 383°F (195°C) for 8 minutes, or in the oven at 392°F (200°C) for 12 minutes.
Now arrange the pumpkin slices on a plate and crumble some feta on top along with a bit of pepper.
