Soft Apple Cookies are a great snack that’s also suitable for children to enjoy with tea or a glass of milk. I cooked them in an air fryer, and they are simple to make and very tasty, so I highly recommend them.
We always have apples at home, and with just a few simple ingredients, practically the same as in a classic apple cake, I made a different dessert that was much appreciated.
The special thing about these cookies is that they remain soft, thanks to the baking powder and the diced apple added to the dough.

Ingredients
- 1.5 cups flour
- 1/4 cup sugar
- 2 tbsps ricotta
- 2 tbsps butter
- 1 egg
- 1 apple
- Half packet baking powder
- 1 pinch salt
- 1 tbsp powdered sugar (for decoration)

How to Prepare Soft Apple Cookies in Air Fryer
Place the diced butter and ricotta in a bowl, add the egg and mix with a spoon. Add the flour, sugar, baking powder, and pinch of salt. When it becomes more consistent, add the diced apple and knead again to obtain a homogeneous dough.
Use a spoon to form mounds and place the cookies in the fryer basket, lining them on a sheet of parchment paper. Continue until you finish the dough; you will obtain about 10 cookies.
Bake at 320°F for 20 minutes. Once cooked, let them cool and decorate with powdered sugar.
