Soft Apple Cookies are a great snack suitable for children as well, to enjoy with tea or a nice glass of milk. I baked them in the air fryer — they are simple to make and very tasty, so I recommend them.
We always have apples at home and with a few simple ingredients, practically the same as those for apple cake, I made a dessert that was different from the usual one and was much appreciated.
The particularity of these cookies is that they remain soft, thanks both to the leavening agent and to the diced apple added to the dough.

Ingredients
- 1 1/3 cup flour
- 1/4 cup sugar
- 2 tbsp ricotta
- 2 tbsp butter
- 1 egg
- 1 apple
- Half tsp baking powder
- 1 pinch salt
- 1 tbsp powdered sugar (for decorating)

How to prepare the Soft Apple Cookies in the Air Fryer
Put the butter cut into small pieces and the ricotta in a bowl, add the egg and mix with a spoon. Add the flour, sugar, baking powder and the pinch of salt; when the mixture becomes firmer add the apple cut into small cubes and knead again to obtain a homogeneous dough.
Use a spoon to form small mounds and place the cookies in the air fryer basket, laying them on a sheet of parchment paper. Continue until the dough is used up; you will get about 10 cookies.
Cook at 320°F for 20 minutes. Once baked let them cool and decorate with powdered sugar.
