Soft Red Mini Pizzas

Soft red mini pizzas are the typical school snack you can find in every bakery. They differ from the classic mini pizzas with mozzarella because they are topped only with tomato sauce, oil, salt, and oregano.

They are a classic of Italian cuisine, also widespread as street food and sometimes found with the addition of other ingredients, like anchovies. They are baked in the oven
and the name “red” comes from the color of the tomato sauce, which is indeed the main ingredient of these mini pizzas.

I often prepare pizzas and focaccias, but these, small and tasty, are perfect as an appetizer or snack and also to bring to school as a snack.

Ingredients

  • 4 cups all-purpose flour
  • 1 cup water
  • 0.35 oz fresh yeast (or 0.1 oz of dry yeast)
  • 3.5 tbsps olive oil
  • 2 tsp sugar
  • 2 tsp salt
  • 2 tbsps olive oil (to grease the bowl)
  • 2 tbsps olive oil
  • 1 cup tomato puree
  • 1 pinch salt
  • 1 pinch dried oregano

Steps: Soft Red Mini Pizzas

  • Place the water, sugar, and flour in the mixer bowl. Start kneading with the hook and add the crumbled fresh yeast.

    After 2-3 minutes add the salt and finally the oil. Continue kneading until a smooth dough is obtained, which will take at least another 5 minutes.

    At this point, form a ball with your hands, place it in an oiled bowl, and also oil the top surface of the dough well so it doesn’t dry out. Now cover the dough with a clean cloth and let it rise in a warm place, away from drafts.

    It should rise for about 3 hours, depending on the room temperature. In any case, wait until the volume of the dough has doubled.

    Now place the dough on a floured work surface and divide it into 1.4 oz pieces each. Shape into balls, place them on the baking sheet lined with paper, and flatten them with your fingers to form the mini pizzas.

  • Preheat the oven to 392°F and, in the meantime, mix the tomato pulp, olive oil, salt, and oregano in a bowl.
    Immediately spread the topping on each mini pizza and, when the oven reaches temperature, bake them.
    Bake for about 15 minutes, then carefully remove the tray and let the soft red mini pizzas cool on a rack. You can eat them freshly made or warm.

  • Can I freeze them already cooked?

    Yes, you can cook them halfway, let them cool, and freeze them. When using, you can finish the cooking by putting them in the oven from frozen, at 356°F for a few minutes.

  • Can I freeze the dough?

    Yes, you can freeze it already divided into portions in a freezer bag. You just have to thaw the balls and proceed with the recipe.
