Tomato Tofu, a tasty vegan main dish that’s very quick to prepare, perfect if you’re looking for a meat alternative, like portobello mushroom steak. If you want a light and different main course, try this recipe: it’s also economical and perfect to prepare in advance.
Tofu has a neutral flavor that absorbs seasonings very well and, cooked this way, is very tasty. I used smoked tofu, which is already flavorful and goes perfectly with tomatoes. You can find it in many supermarkets.
You can slice the tofu, as I did, or cut it into cubes. The important thing is to fry it with a little oil to make it crispy.

- 1 block smoked tofu
- 200 ml tomato puree
- dried oregano

- 2 tablespoons olive oil

Steps for Tomato Tofu
First, put a tablespoon of oil in a small saucepan and sauté the garlic. Then remove the clove and add the tomato puree and a pinch of oregano.
Cook for 10 minutes on low heat, with the lid on to prevent the sauce from splattering. At the end of cooking, season with salt.
In the meantime, slice the tofu into thick slices (or cubes, if you prefer) and cook them in a non-stick pan with a tablespoon of oil, on both sides, for a couple of minutes.
At this point, place the tofu on the plate, add the tomato sauce, another pinch of oregano, and serve immediately.
