Vegetable cream soup without potatoes, a light first course, ideal for a winter dinner but not only, and you can make this recipe even without Thermomix. This is a basic recipe, you can add the vegetables you prefer, changing them according to the season and personal taste.
I find that Thermomix is perfect for making cream soups because in a few seconds you will get a smooth cream perfect even for children who don’t want to feel pieces of vegetables in their mouth.
For me, this is also a fridge-clearing recipe because it allows me to use all the leftover or forgotten vegetables in the fridge, reducing waste in the kitchen.
You can serve the cream soup with a sprinkle of grated cheese or some bread croutons.

- 0.5 oz olive oil
- 1 onion
- 2 cups carrots
- 1 stalk celery
- 3.5 cups zucchini
- 1.5 cups broccoli
- 1 bunch parsley
- 3 cups water
- 1 teaspoon broth cube (homemade or a cube)
- 1 teaspoon salt
How to prepare the Vegetable Cream Soup without Potatoes – also Thermomix
Chop the onion and then sauté it in a pot with the oil for a few minutes.
Add all the chopped vegetables, the water, parsley leaves, the broth cube, and cook over low heat for 30 minutes, stirring occasionally and checking that it doesn’t dry out too much.
Once cooked, turn off the heat and blend the vegetables with a hand blender, adjust the salt, and serve the cream soup hot.
Quarter the onion, put it in the bowl, and chop: 5 sec./speed 7.
Bring down with the spatula, add the oil, and sauté: 3 min./250°F/speed 1.
Add all the chopped vegetables, parsley leaves, water, the broth cube, and cook: 25 min./210°F/speed 1, then blend: 1 min./speed 8. Adjust the salt and serve the cream soup hot.
