Whole Baked Eggplants

Whole baked eggplants, a very light and versatile basic recipe. You can use the eggplants cooked in this way to unleash your creativity in many dishes: you can make side dishes, appetizers, main courses, and first courses.

When I cook eggplants this way, I often prepare Eggplant Balls, the spreadable cream on crostini, or baba ganoush. They are also delicious just cut into strips and seasoned with oil and garlic for a quick summer side.

How to Prepare Whole Baked Eggplants

  • Preheat the oven to 356 degrees Fahrenheit.

    Wash the eggplants and prick them with the tip of a knife.

    Place them in a baking dish lined with parchment paper and bake in a preheated oven for one hour.

    Let them cool slightly, cut them in half, and remove the skin. Now you can use them however you prefer.
