Almond and Chocolate Cookies

Today, a recipe for a sweet breakfast: almond and chocolate cookies!

I must confess that besides breakfast, I also enjoyed them as a snack and after dinner, a true indulgence!!! Fantastic cookies, not too soft and not too hard, with a perfect texture.

My mother always made them when she wanted to make a quick and simple dessert. She used to make one long roll and then cut it into pieces to save time. I made balls and then flattened them slightly for a more cookie-like shape, but I assure you the taste doesn’t change, they’re irresistible.

Mom always has some toasted and chopped almonds in the pantry or freezer, ready to be used at the right occasion, so these treats are never missing at her house, just like the hazelnut heart cookies or a nice cocoa shortcrust pastry for making delicious tarts.

Let’s see together, step by step, how to make this recipe.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp honey
  • 3.5 oz chocolate
  • 0.5 cup sugar
  • 3.5 oz almonds
  • 3.5 tbsp olive oil
  • 3 eggs
  • 1 tsp baking powder
  • 2 tsp brandy
  • 1/2 lemon (juice and zest)

Let’s Begin!

  • First of all, let’s take care of the almonds and chocolate. Put the almonds on a baking sheet and toast them in a preheated oven at 350°F for 8-10 minutes, turning occasionally. Meanwhile, coarsely chop the chocolate on a cutting board with a knife.

    When the almonds are roasted, remove them from the oven and let them cool completely, then coarsely chop them with a food processor.

  • On a work surface, form a fountain with the flour and add all the ingredients: sugar, chopped chocolate and almonds, baking powder, grated zest of half a lemon, and honey. Then, place the liquid ingredients in the center: eggs, olive oil, brandy, and juice of half a lemon. Mix everything together, first with a fork, being careful not to let anything escape from the circle of flour, then with your hands and the help of a dough scraper. (It may stick a bit to your hands, but don’t worry).

  • Now that the dough is ready, lightly grease your hands, take small pieces of dough about 0.9 oz each, and form balls. Place them on a baking tray covered with parchment paper, then flatten them slightly to shape. (see photo above ⬆️⬆️⬆️)

    Bake at 350°F for about ten minutes.

Curly’s Advice

You can make these cookies by changing both the type of chocolate and the type of nuts, so you could make them with walnuts or hazelnuts, or replace the chocolate with white chocolate. Delicious!!!!
