Today’s sweet recipe: banana and blueberry muffins.
These cute little treats please everyone because they can be made in a thousand ways, both sweet and savory, like those with pesto and aquafaba (if you don’t know what it is, I’ll explain it to you) and in all the flavors we want.
Originally from England, they have traveled the world, taking on a different flavor from every place. Today we’ll make banana and blueberry muffins.
Soft and delicious, they are great for breakfast but also perfect for a snack or to offer to your guests with a steaming cup of tea, and why not, to give to some special people.
They are easy to prepare; I always get help from my kids, and they always have a lot of fun mixing the ingredients. Together we also prepare delicious cookies or waffles for a snack.

Ingredients
- 1 1/3 cups all-purpose flour
- 1/3 cup sugar
- 1/4 cup butter
- 3 1/2 tbsp milk
- 1 egg
- 2 tsp baking powder
- 1 banana (1 banana)
- 1/4 cup dried blueberries (dried)
Preparation
Let’s start!
In a stand mixer or with electric whisks, beat the egg white until stiff, then add the liquid ingredients: the yolk, milk, and melted butter.
Beat again and add the sugar. Peel the banana and mash it well with a fork, then add it to the mixture. Mix and add flour and baking powder.
After mixing all the ingredients, we can add the blueberries and mix with a spatula to get everything from the sides.
Take a muffin tin, place the cupcake liners, and pour the batter inside until it reaches about 1/4 inch from the edge.
Bake the banana and blueberry muffins in a preheated oven at 356°F for 40 minutes.
Always do the toothpick test; insert a toothpick in the center of the muffin, if it comes out dry and clean, it’s cooked; otherwise, leave it for a few more minutes.

These ingredients yield 6/8 muffins, depending on the size of the molds. If you want to make more, just double the amounts. You can use the same batter to make a pound cake.
