These cute and tasty savory cookies shaped like Christmas trees taste like parmesan, perfect for completing an aperitif or appetizer accompanied by mousses or pâtés. It’s a savory shortcrust pastry without butter and with the addition of Parmigiano Reggiano. Additionally, I added a nice grind of pepper which goes perfectly, but if you don’t like it, you can replace it with sweet or hot paprika or leave them just cheesy.

  • In a bowl, combine the flour, grated parmesan cheese, salt, and a nice grind of pepper or other chosen spice and mix quickly, then add the egg and olive oil. Knead until smooth and homogeneous. If the bowl is uncomfortable, you can do this step on a work surface by forming a well with the flour and adding all the ingredients. Wrap the obtained dough in plastic wrap and let it rest for fifteen minutes.

  • Take your savory shortcrust pastry, cut a piece, and with the help of a rolling pin, start rolling it out to a thickness of about 1/8 inch, then use a cookie cutter to make the shapes. I chose trees and some stars, but any shape is fine. Place each savory cookie on a baking tray lined with parchment paper and continue until the dough is used up.

  • Bake the Christmas parmesan crackers in a preheated oven at a temperature of 350°F for 20 to 25 minutes, but it largely depends on the thickness you decide to give your cookies.
