Fennel Gratin without Bechamel

When it comes to preparing the side dish, I always go into crisis and end up with the two or three things that I know everyone will eat. This time, however, I wanted to try making fennel gratin. I always saw my mother making this recipe, but I never ate them because I didn’t like them, so I made a modification to her recipe and made them appetizing and super tasty.

A different way to make cooked fennel appealing to children who, rest assured, will appreciate them very much. Fennel gratin has a crispy and fragrant breadcrumb coating because it is enhanced by Parmesan cheese, making this side dish perfect also as an appetizer. They are perfect and light, do not contain bechamel, and are baked in the oven.

I love the combination of fennel and pepper, so I flavored my side dish with this spice, but you can also use other spices or aromatic herbs that you like, such as thyme, oregano, sage, or parsley, and mix them together or, why not, with some orange zest which goes perfectly with fennel.

Ingredients

  • 9 oz fennel
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1 1/2 tbsp olive oil
  • 1 tbsp butter
  • to taste pepper

Let’s Start!

  • Take the fennel and remove the leafy part, then slice it about half an inch thick, place them in a bowl, and wash them thoroughly.

  • After draining them completely, add breadcrumbs, grated Parmesan, salt, and a pinch of pepper to the fennel. Mix everything together, trying to coat all the fennel with the breading.

  • Take a baking dish and line it with parchment paper. Arrange the fennel inside, placing them carefully, then pour olive oil and small pieces of butter on top. Bake in a preheated oven at 375°F for about 35 minutes or until golden brown on top.

As I mentioned at the beginning, fennel gratin can be flavored however you like, but you can also change the type of cheese used, for example, by using grated pecorino instead of Parmesan for a more intense flavor.
