Today I propose a very simple recipe, great both in cold and hot versions, a grain mix with zucchini and tuna scented with lemon. I love it because it’s a one-dish meal that I often prepare to put in my lunch box, it’s light and nutritious, perfect for different occasions. For a tasty lunch or an easy dinner, this grain mix will be great to enjoy.
My grain mix is composed of rice, barley, spelt, oats, and wheat that harmonize wonderfully with diced dark zucchini and tuna, all scented with grated lemon zest.

Ingredients
- 10.5 oz grain mix
- 5.6 oz tuna in oil
- 14.1 oz zucchini
- 1/2 lemon (zest)
- 1/2 onion
- 3.4 tbsp olive oil
- 1 pinch pepper

- 1 Scale
- 1 Cutting Board
- 1 Knife
- 1 Pan
Let’s Start!
First, let’s take care of the zucchini by washing them and cutting off the ends, then slicing them lengthwise and cutting them into strips to form small cubes. Chop the onion as well.
In a pan with high sides or a wok, put the olive oil with the onion and lightly fry, then add the zucchini with a splash of water and let cook for three to four minutes. Adjust with salt and pepper.
When they are cooked, pour the drained tuna into the pan and mix. Stir to blend the flavors and leave on the heat for a minute.
Meanwhile, as the zucchini cooks, bring water to a boil to cook the grain mix. When cooked, drain and pour into the pan, mix, and add a grated edible lemon peel.

The grain salad with zucchini and tuna is delicious both freshly made and eaten cold. If you want to consume it cold, I recommend taking it out of the fridge a little earlier and eating it at room temperature. You can store it in the fridge for a couple of days in an airtight container. If you wish, you can add the juice of half a squeezed lemon to the zucchini pan when you add the tuna.
