Today’s sweet recipe: muffins with orange infusion without eggs, milk, or butter.
These muffins with orange infusion came from wanting to use an infusion I had prepared but couldn’t drink because I was in a hurry to leave. Lately, even simple things like enjoying a nice herbal tea seem like huge tasks!!! 😂
I had already made cakes, plumcakes, or other muffins with different infusions, but I hadn’t tried this orange one yet, and I must say it’s very good and fragrant. The muffins are easy and quick to prepare for breakfast or a snack, and this recipe will impress anyone who tastes them.
These treats, besides being delicious and soft, are also without eggs, milk, or butter, making them perfect for those who are intolerant or those who have chosen a diet that does not include these ingredients.

Ingredients
- 1.48 cups infusion (orange)
- 1/3 cup vegetable oil
- 2.88 cups all-purpose flour
- 1 tbsp baking powder
- 3/4 cup sugar
- 1 orange (zest)
- as needed powdered sugar (optional)

Let’s Start!
To start, we need lukewarm tea, so we boil the water and immerse our infusion or tea bags. Once it has cooled down a bit, pour it into a bowl and add the vegetable oil, stirring to combine and dissolve the oil.
In another bowl, mix the flour, baking powder, and sugar with a spatula. Then add the liquids and continue mixing to avoid lumps. At this point, add the grated orange zest and give it another mix. Now our batter is ready to be transferred to the molds.
Take a muffin tin and place a paper liner in each space. Using a spoon, drop the batter into the liners, filling them about 2/3 full.
Bake in a preheated oven at 356°F (180°C) for 20-25 minutes. Before removing, always do the toothpick test—every oven bakes differently. Insert a toothpick into the center of a muffin; if it comes out dry and clean, it means our dessert is ready to be taken out of the oven.
