Today a recipe for an appetizer, aperitif, or savory breakfast: savory cheese waffles.
We are used to eating sweet waffles, maybe soft cocoa ones, but with a waffle maker we can also prepare delicious and tasty appetizers to serve with fresh cheese creams or grilled vegetables. Perfect for an aperitif with your favorite cocktail, in this case, I recommend cutting them into smaller pieces and getting creative by filling each cavity with a different ingredient like some mortadella mousse, an eggplant compote, a bit of avocado cream or even an anchovy in oil or a stuffed olive. And what about a savory breakfast with cheese waffles, eggs, ham…?
The preparation of savory cheese waffles is very simple. I always make them with my kids, and they have so much fun discovering whether the batter overflows or not during cooking! 😅
In this recipe, I use grated Parmesan cheese, but you can also use excellent Pecorino cheese for a more intense and tasty flavor. I assure you they will be a true explosion of taste!
My waffle maker allows me to cook two waffles at a time. The cooking time indicated is for every two waffles, so the whole recipe will take about half an hour.

Ingredients for about 10 waffles
- 1 cup water
- 2 cups all-purpose flour
- 3.5 tbsps butter (softened)
- 0.88 oz grated Parmesan cheese
- 1 tsp instant yeast for savory preparations
- 4 eggs
- 0.5 tsp salt

Let’s make savory waffles together
Break the eggs and separate the yolks from the whites, beat the whites until stiff in the stand mixer or with the electric mixer. Meanwhile, place the softened butter in a bowl and mash it with a fork, then add the egg yolks and mix.
Add the sifted flour and yeast for savory cakes to the eggs and mix with a spatula, then add the water and stir until a homogeneous mixture is obtained, add the salt and mix again.
To the batter, add the grated cheese, in this case, 24-month aged Parmigiano Reggiano, mix vigorously to blend the ingredients well and avoid the presence of lumps.
Now it’s time to add the egg whites that will be well whipped to stiff peaks. Add a spoonful of them first and mix without too much care, then add the rest of the egg whites, mixing carefully with a spatula with gentle movements from bottom to top so as not to deflate them.
Turn on the waffle maker and wait for it to reach temperature, then pour a ladle of batter into each compartment and try to spread it to cover the entire surface. For my machine, about 70/80 grams of batter are needed to make a complete waffle that doesn’t overflow after closing. Close the plate and let cook for 5 minutes. Continue until the batter is finished.
The savory cheese waffles are ready to be enjoyed plain or filled with whatever you prefer.
