Today’s savory recipe for a tasty appetizer: savory waffles with olives.

When I have guests for dinner, I like to entertain and pamper them with a delightful appetizer while waiting for the meal. Therefore, I often make cheese savory waffles, which this time I have enhanced with some tempting green olives. With each bite, you experience the softness of the waffle and the saltiness of the olives, which, paired with your favorite cocktail, will make the appetizer a perfect prelude to a great dinner.

Preparing olive waffles is easy; you need simple ingredients that we usually have at home, like eggs, flour, butter, baking powder for savory cakes, and, of course, green pitted olives in brine to make the batter, which will then be cooked in the waffle maker for 5 minutes.

Along with the olive waffles, you could also prepare for your appetizer a delicious zucchini rustic pie or a rustic ham pie; additionally, you can use the olive waffles as an appetizer by serving them on a small plate and topping them with spreadable cheese or bresaola with arugula and Parmesan.

Ingredients for about 10 olive waffles

  • 2 cups all-purpose flour
  • 1 cup water
  • 3.5 tbsps butter (soft)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp instant baking powder for savory preparations
  • 1/2 tsp fine salt
  • 3 oz green olives in brine (pitted and drained)

Let’s Prepare the Olive Waffles Together

  • Separate the yolks from the egg whites and place the latter in the mixer bowl to whip them to stiff peaks. Meanwhile, in a bowl, place the soft butter and mash it with a fork, add the egg yolks, and mix.

  • Add the sifted flour and baking powder to the yolks, mixing with a spatula, then also add the water and mix again until you obtain a smooth batter.

  • At this point, add the grated cheese and salt and mix again with the help of a spatula to avoid creating lumps.

  • Now the egg whites will be well whipped, so we can add them to the batter obtained so far, add half at a time, and mix gently with a spatula using movements from bottom to top to avoid deflating them.

  • Take the pitted green olives, drain them from the brine, and rinse them lightly. Place them on a cutting board and chop them with a knife into small pieces, then add them to the previously prepared batter.

  • Turn on the waffle maker and wait for it to reach temperature, then pour a ladle of batter onto the plate, close it, and let it cook for 5 minutes. If you want a square and whole waffle, be sure to spread the batter with the help of the ladle over the entire surface. If you prefer them with a central shape only, put less batter in the center and close. For my machine, it takes about 80 grams of batter to create a whole and perfect waffle without batter spilling out.

  • After the five minutes of cooking, open the plate and remove the two waffles obtained, place them on a plate, and continue cooking the others until the batter is finished.
