Baked pumpkin is one of those easy and quick recipes to prepare that is always on my table at this time of year. It pairs wonderfully with all main dishes, whether meat, fish, or cheeses.
Autumn is the season of pumpkins, vegetables that belong to the cucurbit family: they include hundreds of varieties, divided into various species, coming from every part of the world, differing in shape, skin appearance, and flesh quality. Pumpkin is rich in vitamin A, C, and beta-carotene, as well as minerals such as potassium, calcium, and phosphorus.
Pumpkin is a very versatile ingredient in the kitchen, allowing for a wide variety of recipes, both sweet and savory, such as delicious pumpkin-filled ravioli, cookies, crackers, or a delectable panna cotta. Moreover, certain types allow you to use every part of it. The pumpkin I’ve used today for baking, for example, has edible skin.
To prepare the spiced and flavored baked pumpkin, I chose a delica pumpkin, one of my favorites because it is slightly sweeter than others, and to my great surprise, I discovered that my son loves it too.

Preparing baked pumpkin is very simple and quick. Start by thoroughly washing the pumpkin because with the delica pumpkin you can eat the skin too. Then cut it in half and remove all the internal fibers and seeds with the help of a spoon. Remember not to throw them away as you can roast them. After cutting it in half and cleaning it, cut slices about 1.5 or 2 inches thick.
Line a baking tray with parchment paper and place the pumpkin slices on it. Drizzle with olive oil, sprinkle with salt, and dust half with paprika and the other half with rosemary needles.
Bake in a preheated oven at a temperature of 390°F for about 30 minutes until nice and tender.
